Details

This Direct Trade Pink Bourbon from Ramón Hoyos of Finca Filadelfia II in Huila is a luscious light roast with notes of strawberry jam, milk chocolate, and red grapefruit.

Filadelfia II is part of a familial inheritance divided among twelve siblings united in purpose. They keep the farm’s original name in honor of their parents. Their farm is accompanied by a small natural forest reserve that maintains excellent soil for their coffee and provides water.

An on-site laboratory built by Ramón's father has helped them experiment with alternative processing methods and share advancements with neighbors, transforming Filadelfia into a hub of learning and innovation for the local coffee community.

Produced by Pour Ta Coffee in Laramie, Wyoming.

Context

Produced by Ramón Hoyos in the Huila region of Colombia, this Pink Bourbon lot showcases the distinct characteristics of its varietal. The coffee is prepared using the honey process, a method that often bridges the gap between washed and natural coffees by retaining a portion of the fruit mucilage during drying. This technique frequently contributes to a balanced cup profile, highlighting both sweetness and acidity.

Offered by PT's Coffee Roasting, this specific pour-over pouch presents a flavor profile defined by strawberry jam, milk chocolate, and red grapefruit. While individual experiences may vary, these notes can be mapped against the flavor wheel to better understand the interplay between the fruit-forward acidity and the creamy, chocolatey base. This selection serves as an excellent example of how careful processing and varietal selection can create a nuanced, approachable experience for the home brewer.
