From Monogram

A playful cherry co-fermented Castillo from longtime friend and producer Jairo Arcila, showcasing just how expressive modern Colombian coffee can be.

For the past six years, we've loved sharing coffees from Jairo Arcila. At his farm, Villarazo, in Colombia, Jairo has built a reputation for producing coffees that are creative, approachable, and full of personality. Whether he's working with classic washed coffees or exploring more experimental processing, his attention to detail always shines through.

This lot is a great example of that spirit. Using a carefully managed cherry co-fermentation, Jairo and his team develop vibrant fruit character while preserving sweetness and a floral clarity. It's an inventive approach that yields expressive, flavour-packed cups with remarkable balance.

Castillo is one of Colombia's most widely grown coffee varieties, prized for its consistency and versatility. In Jairo's hands, it becomes a canvas for creativity, resulting in a coffee that's bright, juicy, and full of playful fruit character

Context

Produced by Jairo Arcila in Colombia, this experimental lot from Revolver Coffee showcases the innovative potential of the Castillo varietal. While this specific coffee utilizes a cherry co-ferment process, it is helpful to understand how processing methods fundamentally alter the chemical composition of the bean, often shifting the final cup profile toward more intense, fruit-forward characteristics.

In the world of specialty coffee, co-fermentation involves introducing external ingredients—such as fruit or yeast—during the fermentation stage to influence the sensory outcome. When evaluating a coffee with notes of mango, papaya, and floral aromatics, tasters often reference the flavor wheel to identify these complex, non-traditional descriptors. By pushing the boundaries of traditional post-harvest techniques, producers like Arcila are redefining the expectations for high-quality Colombian exports, offering a distinct experience that highlights the synergy between agricultural precision and creative processing.
