From the roaster

“Jairo does it again! - and this time with a rare, and truly exceptional varietal. Is there no end to this farmer’s talents?”

Wow, what an amazing lot this is. This is our first ‘Papayo’ and it won’t be our last, that’s for sure.

In the cup, you can expect standout clarity and complexity. Raspberries are the dominant fruit note and they sit alongside a wonderful lime acidity. A rich, brown sugar sweetness rounds things off beautifully and you’re left with the impression of a perfectly balanced coffee.

This is what happens when you take an exceptional varietal and judge the processing perfectly. Yes, it’s an anaerobic fermentation, but you wouldn't know in the cup….and that’s a compliment. This is washed coffee at its very best.

Context

Produced by Jairo Arcila in Colombia, this specific lot features the rare Papayo varietal. The coffee undergoes an anaerobic process, a technique that often influences the final cup profile by intensifying acidity and body through controlled fermentation. Foundry Coffee Roasters highlights notes of raspberries, lime, and brown sugar in this selection, showcasing the distinct character of the Papayo cultivar.

When exploring coffees processed anaerobically, drinkers may notice a departure from traditional washed profiles, often resulting in more pronounced, complex fruit-forward characteristics. To better understand how these specific descriptors align with broader sensory categories, you can reference the flavor wheel. This offering serves as a compelling example of how Jairo Arcila’s meticulous approach to post-harvest processing can elevate the unique genetic traits of the Papayo varietal, providing a vibrant and nuanced experience for those interested in the evolving landscape of modern Colombian coffee production.
