From the roaster

“This coffee is a great example of a ‘clean’ natural. The natural process highlights the fruit notes but there’s no real ‘funk’ here, just elegant, well structured and complex coffee”

There’s a lot going on with this coffee. The fruit notes are light and clean, sweet oranges, pineapple and tropical vibes with a clean lime acidity. It reminds us of the those fruit squashes we drank as kids.

As espresso, we get a lovely pistachio note that combines really well with milk for a very slightly nutty flat white. The gentle acidity still cuts through nicely though, bringing balance and structure. This is a multi-dimensional coffee that reveals something new with each cup.

Context

The Colectivo Pacaybamba from Foundry Coffee Roasters represents a vibrant expression of Peruvian coffee production. Sourced from the Pacaybamba producers, this lot undergoes a natural process, a technique where the coffee cherry remains intact while drying. Generally, natural-processed coffees are known for their heavier body and pronounced fruit-forward characteristics, often highlighting the inherent sweetness of the fruit sugars absorbed during the drying phase.

In the cup, this selection offers a bright, complex profile featuring sweet oranges, pineapple, and lime, balanced by a distinct nutty finish of pistachio. These tropical notes invite a sensory exploration that aligns well with the descriptors found on the flavor wheel. By focusing on the intersection of traditional processing and regional terroir, this coffee provides a clear look at the evolving quality coming out of Peru, showcasing how careful handling at the farm level can result in a remarkably expressive and lively final brew.
