Villa Pastora - Colombia
Roasted by Foundry Coffee Roasters
This washed Pink Bourbon from Colombia offers notes of strawberry cream, chocolate, raspberry, florals, and a touch of black tea.

From the roaster
“Did you know that some poeple actually don’t like those chocolates with the strawberry cream centre you find in Roses or Quality Street tins? - crazy I know. This coffee is for the rest of us. ”
…and what a delight this coffee is. It’s a straight up, washed Pink Bourbon from Colombia. Nothing fancy in the processing, just very high quality coffee, grown by people who really know what they are doing.
In the cup, you can expect the aforementioned, strawberry cream, or maybe a chocolate coated strawberry - super sweet and fresh. But then a crisp and slightly zingy raspberry acidity alongside hints of florals and a touch of black tea bitterness to balance everything out.
All in all, a super satisfying coffee, however you like to brew your beans.

Context
This offering from Foundry Coffee Roasters showcases the distinct profile of the Pink Bourbon varietal, a hybrid known for its unique balance of sweetness and acidity. Sourced from Colombia, this lot undergoes a washed process, a method typically employed to highlight the inherent clarity and brightness of the bean. By removing the fruit flesh before drying, producers can emphasize the clean, crisp characteristics often associated with high-quality Colombian harvests.
In the cup, this coffee presents a complex interplay of berry-forward sweetness and delicate aromatics, ranging from strawberry cream and raspberry to subtle floral and black tea notes. When evaluating such nuanced profiles, tasters often reference the flavor wheel to identify the specific layers of chocolate and fruit. While washed coffees are generally celebrated for their refined acidity and clean finish, the specific genetic expression of Pink Bourbon often adds a sophisticated, tea-like elegance that distinguishes it from other regional varieties.
