From the roaster

In south jersey and I guess also parts of philly metro they say "wooder" instead of water. If you buy this coffee and you see that, that's why.

It's a fairly linear coffee taste profile in that it does a few things. The biggest being a full on assault of watermelon jolly ranchers.  Very sweet, very easy to drink.

Context

Produced by Brayan Alvear in Colombia, this unique lot showcases the innovative potential of modern processing techniques. As a watermelon fruit ferment, this coffee highlights the producer's focus on controlled post-harvest environments to influence the final cup profile. While traditional washed coffees often emphasize clean acidity and balance, experimental fermentations like this one are designed to push the boundaries of sensory expression, often resulting in intense, candy-like sweetness.

Roasted by Royal Mile Coffee, this selection is noted for its distinct watermelon jolly rancher profile. Such vibrant, fruit-forward characteristics can be challenging to categorize, often pushing the limits of the standard flavor wheel. By manipulating the fermentation environment, producers like Alvear are able to amplify specific aromatic compounds, offering a distinct experience that stands apart from conventional regional profiles. This coffee serves as a compelling example of how meticulous processing can transform the sensory landscape of a single origin.
