From the roaster

An absolute stunner of a pour over coffee. This one left off the table during both cuppnigs. All kinda of taste notes lept out. Orange Blossom, Oranges, Citrus, Jasmine, Caramel, Chocolates, Honey, Almonds, Sweet and very bright. It sort of does a lot of things all at once. I'm probably overselling this coffee to a degree and most people will go "nice" like I had just said 69 to them but please know this is a coffee roasters coffee. We geek on it doing a lot of things all at once because we cup those awful coffees your boomer dad drinks and have to smile and go yeah, like, it's coffee while we dream of coffees like this one. Will you have an out of body experience? Probably not unless you got game like that. And if you do got game like that just get up in our dm's. I'm kidding. Please don't email me. Ever.

If you somewhat trust my judgement and read this far and aren't entirely turned off by my meme's and popping wheelies on your boomer dad *could be boomer mom! I don't judge actually wait a second who am I kidding it's usually boomer dads, anyways where was I?) endlessly for no good reason in my taste note sections purely for the laugh I'll never hear please know I'm speaking to you, yes you, you'll like this a lot. That was my attempt at a record length sentence if you couldn't guess. Thanks for coming along for the ride. If you read this and got mad, it's not for you and that's cool man.

Context

The Colombia Las Mercedes Sidra, roasted by Royal Mile Coffee, offers a compelling look at the potential of the Sidra varietal. Grown in Colombia, this lot showcases a complex profile that balances delicate aromatics with a grounded, sweet finish. While Sidra is often celebrated for its unique ability to bridge the gap between high-toned acidity and deep, sugary undertones, this specific selection highlights that versatility through notes of orange blossom, jasmine, and citrus, anchored by caramel, chocolate, honey, and almond.

When exploring such a nuanced cup, it is helpful to reference the flavor wheel to better identify the interplay between the floral top notes and the richer, nutty base. Coffees from this region frequently exhibit a bright, clean character, and this offering from Las Mercedes serves as a prime example of how careful cultivation can elevate the inherent qualities of the plant.
