From the roaster

I've said this a few times what we have here is a "rare" origin or at the very least one we haven't carried. The cost is reflective of these not ethiopia coffees.

I don't have a ton to say because it's late and I sort of feel like saying this does the dry process taste with fruits and it's mostly dried fruits is the best way to just share what this coffee it. It's sour, peachy/apple/pears. Give it a spin as espresso.

Context

The Congo Kabare Katana Dry Process, offered by Royal Mile Coffee, represents a distinct expression from the Kabare Katana region. As a dry-processed coffee, it undergoes a method where the fruit remains intact during drying, a technique that often imparts a heavier body and intensified sweetness compared to washed counterparts. You can learn more about how these processing methods influence the final cup profile in our educational guide.

In the cup, this selection highlights a vibrant spectrum of orchard and stone fruits, featuring notes of peach, apple, and pear alongside a characteristic acidity. These dried fruit and tart qualities invite a closer examination of the flavor wheel to better identify the nuances of its complex profile. While natural-processed coffees are frequently celebrated for their bold, fruit-forward character, this specific lot from the Congo offers a unique opportunity to experience the regional terroir through the lens of traditional dry processing.
