8oz.

I don't have a ton to say other than tell you it's from Edwin Norena who is as top tier as it gets. Whatever you think of me, know I think highly of this man's coffee production capabilities. I almost shouldn't say much because it might take credit for his wizardry.

We got a very raspberry, cola, cherry booze but not "boozy" anaerobic. Like it tastes as if it's vermouth or something. I've not had a drink in a decade so take that for what it is. Limited amount. If you see it, and it's here, and you trust me in any capacity and like this silly fruit bomb company, just trust and buy it. It wont let you down.

Context

Produced by Edwin Norena, this anaerobic-processed coffee is offered by Royal Mile Coffee. The anaerobic process involves fermenting coffee cherries in a sealed, oxygen-free environment, a technique often utilized to manipulate the final cup profile by encouraging specific microbial activity. While general processing methods can significantly alter the acidity and body of a bean, this specific lot is characterized by the roaster’s notes of raspberry, cola, and cherry booze.

When evaluating such distinct flavor profiles, it is helpful to reference a flavor wheel to better categorize the complex, fruit-forward sensations often found in experimental fermentations. Because anaerobic processing can produce intense, wine-like characteristics, these coffees are frequently sought after by those looking for a departure from traditional washed profiles. This offering highlights the meticulous control producers like Edwin Norena exert over the fermentation stage to achieve such specific, vibrant sensory outcomes in the final brew.
