Context

The Black Condor, sourced from the Tolima region of Colombia and roasted by The Barn, represents a focused expression of high-quality production by Forest Coffee. This lot undergoes a washed process, a method typically employed to highlight the inherent clarity and acidity of the bean by removing the fruit pulp before drying.

In the cup, this coffee presents a profile defined by blackberry, red grape, fig, and cacao. While washed coffees are often celebrated for their clean, vibrant profiles, the specific interplay of these dark fruit and cocoa notes offers a complex experience for the palate. To better understand how these descriptors align with broader sensory categories, you can consult the flavor wheel. By emphasizing the distinct characteristics of the Tolima terroir, this selection showcases the meticulous post-harvest techniques utilized by the producers to achieve such a refined and balanced cup.
