The venture began as a mobile operation, serving coffee from the back of a red pickup truck while roaming southern California, before settling into a permanent home in the Highland Park neighborhood of Los Angeles. The roastery now operates multiple café locations, including Highland Park, Studio City, and Downtown Los Angeles. Civil Coffee roasts once per week on Fridays to ensure peak freshness, with online orders fulfilled and shipped on Fridays and the following Tuesdays. The menu is intentionally broad, embracing both obscure single-origin coffees and offerings designed for everyday enjoyment.
