Civil Coffee's 2 Kilo La Union—Rosita brings together multiple classic Mexican coffee varietals in a single lot sourced from Oaxaca and Guerrero. The blend of Bourbon, Typica, Mundo Novo, and Caturra represents a cross-section of heritage genetics, each contributing distinct character to the cup. Processed using both washed and natural methods, this dual-processed approach allows different flavor dimensions to emerge: the roaster identifies cantaloupe and clementine brightness alongside honeysuckle's floral character. Grown between 1200–1800 meters above sea level across these two premier Mexican regions, the lot captures the complexity that regional elevation and varied processing can deliver to traditionally cultivated stock.
