Sourcing Story

49th Parallel Crop To Cup Story

This new instant coffee leverages our single origin coffee from Taltalcha washing station in Ethiopia, located in the Guji region, Oda Shakiso district. Owned by Abraham Bagasho, they are receiving and processing coffee cherries from over 120 farming families in the surrounding area.

Most of the farmers are producing coffee between 1700 - 2100 m.a.s.l, with the average producer’s farm being around 1 hectare in size. Varieties found are local heirloom and JARC varieties. JARC varieties are cultivars that were developed by the Jimma Agricultural Research Centre (JARC), in order to improve disease and pest resistance while increasing crop yield.

To create our instant coffee, we partnered with Swift Cup Coffee where they use their innovative freeze-drying process on our coffee beans, preserving and locking in each coffees unique flavour profiles.

Context

The African Tribute, sourced from the Gera region of Jimma, Ethiopia, represents a unique offering from 49th Parallel Coffee Roasters. Produced by the Kolla Bulcha Farmer's Cooperative, this lot features local heirloom varietals grown at elevations between 2000 and 2100 masl. What distinguishes this specific coffee is its unconventional processing; while most Ethiopian coffees are traditionally washed or natural, this selection utilizes freeze-drying.

Understanding how processing methods influence the final cup is essential for any enthusiast. While traditional drying techniques often emphasize either clarity or heavy fruit profiles, freeze-drying can create distinct structural changes in the bean, potentially altering how volatile compounds are perceived. When evaluating the roaster’s notes of apple pie, blueberry, and grape, it is helpful to reference the flavor wheel to better identify the nuanced acidity and sweetness inherent in these high-altitude heirloom beans. This coffee serves as a fascinating study in how modern technology can intersect with traditional regional terroir.
