Context

Sourced from the Guji zone, this Ethiopia Shakiso offering from Case Coffee Roasters highlights the distinct character of the region’s Heirloom cultivars. While washed processing methods are often utilized in Ethiopia to emphasize a clean, vibrant acidity and clarity in the cup, the specific profile here presents a delicate balance of ripe peach, vanilla, and red apple.

In the broader context of specialty coffee, washed Ethiopian lots are frequently celebrated for their tea-like elegance and bright, fruit-forward profiles. To better understand how these specific descriptors align with broader sensory categories, tasters may find it helpful to reference the flavor wheel. By focusing on the interplay between the region's unique terroir and the meticulous preparation of these heirloom cherries, this coffee serves as a refined example of the classic profiles associated with the Guji highlands.
