Lime pie, apricot & gingernut biscuit.
Rachia is a fruit-forward natural from Ethiopia’s famed Yirgacheffe, produced by more than 350 smallholder farmers across the Idido district. Ripe cherries are delivered to the Gizat Washing Station, where meticulous sorting ensures only the best fruit makes the cut. Whole cherries are then laid out on African raised beds for a slow, steady dry over 15–20 days. Careful airflow, temperature control and regular turning allow sugars to develop evenly while preserving clarity and balance. After drying, the coffee rests locally before undergoing further sorting and milling, ready for export. In the cup, Rachia is bright, complex and full of character, with lively notes of lime pie, apricot sweetness and a warm gingernut finish.

Context
This natural-processed Yirgacheffe from Five Senses arrives via Gizat Washing Station with a fruit-forward profile that's characteristic of the region's terroir. The natural process—where beans dry inside the cherry—typically contributes heavier fruit expression and fuller body; here it translates to apricot and lime pie notes anchored by the texture of gingernut biscuit. The combination suggests both juicy brightness and subtle spice, inviting exploration across the flavor wheel from stone fruit through citrus to warming baking spice.
