The Story

Tabi is a relatively new variety, released by Colombia's Coffee Research Institute (CENICAFE) in 2002. This cross between Typica, Bourbon, and Timor is resistant to Coffee Leaf Rust while retaining the desirable cup characteristics of Typica and Bourbon. "Tabi" means "good" in the dialect of the native Guambiano people.

From the importers, Inconexus:

"Before growing coffee, Didier Anacona cultivated corn and platanos. He turned to coffee production after learning about the harmful effects of pesticides and began to grow coffee organically as well as breeding bees, which were another important reason to stop using agrochemicals and protect the environment. In return, bees provide him with honey and supplement his work by pollinating the coffee and plants.

"Seven years ago, he and his wife bought this farm and decided to call it El Porvenir—the future. They cultivate the Tabi variety because it is disease-resistant with good cup quality. When Didier started planting the first trees, it was a rare variety, with much less density than other coffee trees. But the cup quality is outstanding, with fruit flavors, sweet aroma, and dense body."

Context

Produced by Didier Anacona in the Huila region of Colombia, the El Porvenir Tabi Washed represents a meticulous approach to specialty coffee cultivation. This lot features the Tabi varietal, a unique hybrid developed by Cenicafé that crosses Timor Hybrid with Bourbon and Typica to combine disease resistance with high cup quality. By utilizing a washed process, the producer emphasizes the inherent clarity and acidity of the bean, allowing the distinct profile of Gala apple, macadamia, and ruby red grapefruit to shine through.

Sourced and roasted by PT's Coffee Roasting, this selection highlights the precision required to balance the bright, citrus-forward notes of a washed Colombian coffee with the creamy, nutty undertones characteristic of the Tabi variety. For those looking to better understand the nuances of these specific descriptors, consulting a flavor wheel can be an excellent way to identify and categorize the complex sensory experience found in this cup.
