From the roaster

A not funky but funky coffee. It's funky for a natural. Not entirely for an anaerobic natural. If you're searching for the smell of farts you'll need to go someplace else. I did manage to get a solid amount of funkiness when viewed on the spectrum of it's a natural so take that for what it's worth. Strawberry, chocolates. It's still a nice ass coffee just not farts.

Context

The Ethiopia Anaerobic Natural Banko Chelchele, roasted by Royal Mile Coffee, offers a compelling look at the intersection of traditional terroir and modern processing. Sourced from the Banko Chelchele region, this lot utilizes an anaerobic natural method, a technique that often intensifies the inherent sweetness and complexity of the bean. While natural-processed coffees frequently exhibit heavier fruit profiles and increased body, the specific application of anaerobic fermentation can further amplify these characteristics, often resulting in the distinct strawberry and chocolate notes identified by the roaster.

For those exploring the nuances of this cup, referencing the flavor wheel can be a helpful tool in identifying the subtle layers within these profiles. By combining the unique environmental conditions of its origin with a controlled fermentation environment, this coffee serves as a prime example of how processing choices can highlight specific sensory attributes, providing a sophisticated experience for the palate.
