From the roaster

While this is an anaerobic natural coffee I want to be very clear it's not a funky winey fruit bomb. It is a rather nice fruity coffee for a Honduras normal coffee. I think that's the lane to view it in rather than the processing as a lead. I'll bang this drum a bit that as we understand it you don't really want high funky things going on, however much we all love that as a profile. To each their own?  I love the funky fruit robic's but there's also a less active side and this is that. Enjoy a fruity tasting honduras at a comparably attractive price for a robic.

Context

The Honduras Anaerobic El Pedereo, sourced by Royal Mile Coffee, represents a compelling example of modern processing techniques applied to traditional Honduras coffee production. By utilizing an anaerobic natural method, producers create a controlled fermentation environment that often results in heightened complexity and distinct, unconventional flavor profiles compared to standard washed lots.

While the specific characteristics of this lot are unique to its harvest, anaerobic processing is frequently associated with intense fruit-forward notes and a syrupy mouthfeel. Enthusiasts looking to better understand how these fermentation variables influence the final cup can reference the flavor wheel to identify the nuanced aromatics often found in such experimental batches. This coffee serves as an excellent case study for how regional terroir interacts with innovative post-harvest handling to push the boundaries of what is possible in a cup of coffee.
