ABOUT

Although also famous for its breathtaking mountainscape , Narino is better known in the coffee world for its ideal soil and climate conditions. The region is blessed with nutrient rich soil, thanks to the volcanoes that surround it. One of the main volcanoes is Galeras, which overlooks Pasto, the capital of Nariño. A part of the volcano also extends into the municipality of Consacá. Galeras plays an important role in the life of this region and is often referred to as Taita. This term comes from the indigenous communities of Nariño, such as the Quillacingas, and references a spiritual leader and guide within a community who always seeks the well-being of all.

This season’s Taita is a heady combination of tropical fruits and honeyed texture. A delicious example of how good regional blends from Colombia can be. Refreshing, vibrant and heavy on the summertime fruits.

Context

Sourced from the Consacá region of Nariño, the Taita lot represents a collaborative effort from three contributing producers in Colombia. This fully washed coffee highlights the meticulous preparation often found in this high-altitude landscape. While Colombia is renowned for its diverse microclimates, washed processing is frequently utilized to emphasize a clean, vibrant acidity and refined sweetness. In this specific offering from Seven Seeds, the cup profile presents distinct stone fruit and melon characteristics, including notes of cantaloupe, peach, and plum.

When evaluating such nuanced profiles, tasters often reference the flavor wheel to better articulate the complexity of these fruit-forward attributes. By focusing on the clarity provided by the washing process, this coffee showcases the potential for balance and elegance inherent in Nariño’s regional output. It serves as a compelling example of how producer-level precision directly influences the final sensory experience in the cup.
