One More Thing: Nestled near the Geta River in Sidma's Bura district is Gara Agena. This coffee went through a special prep; cherries picked at peak ripeness, immersed in water to remove floaters and soaked for 8 hours. They're then depulped and fermented for 36 hours. The parchment coffee is finally dried on raised beds in shade for 21 days - resulting in a clean and stone fruit forward cup.

Context

The Ethiopia Gara Agena, sourced by Single O, originates from the Bura district within the Sidma region. This specific lot undergoes a washed process, a method typically employed to highlight the inherent clarity and acidity of the bean. While washed coffees are often celebrated for their clean, vibrant profiles, this selection is noted by the roaster for its distinct stone fruit characteristics.

When evaluating such profiles, enthusiasts often consult a flavor wheel to better identify the nuances between different stone fruits, such as peach, apricot, or plum. Because the washed method removes the fruit flesh before drying, the resulting cup tends to emphasize the terroir of the Bura district rather than the influence of fermentation. This approach provides a focused, elegant experience that showcases the traditional qualities associated with high-quality Ethiopian coffee production.
