Context
Produced by Jairo Arcila in Colombia, this selection highlights the innovative techniques currently emerging from the region. As a cherry co-ferment, this coffee undergoes a specialized processing method where additional ingredients are introduced during fermentation to influence the final cup profile. While traditional washed coffees often emphasize clean acidity, experimental co-fermentation can yield complex, unconventional aromatics that challenge standard expectations.
Roasted by The Barn, this lot serves as a compelling example of how producers are pushing the boundaries of post-harvest handling. When evaluating such distinct profiles, it is helpful to consult a flavor wheel to better identify the specific nuances resulting from these controlled fermentation environments. By focusing on the intersection of origin-specific terroir and intentional processing, Jairo Arcila continues to demonstrate the evolving potential of Colombian coffee production.
