After selecting this coffee we roasted it with a profile to bring out notes of vanilla and butterscotch. This coffee also gives you a sweet cup with balanced juiciness and a bright acidity like pomelo. Enjoy!

Context

Produced by Oliver Cortés in the Huila region of Colombia, this competition-grade lot showcases the potential of the San Bernardo varietal. Grown at 1800 masl, the coffee undergoes a washed process, a method often utilized to highlight the inherent clarity and acidity of the bean. While Colombia · Huila is widely recognized for producing balanced, high-quality profiles, this specific selection from Da Matteo leans into a distinct sweetness, featuring notes of vanilla, butterscotch, and pomelo.

When evaluating such nuanced profiles, it is helpful to reference the flavor wheel to better categorize the interplay between the citrus-forward pomelo and the richer, dessert-like undertones. Washed coffees generally emphasize the crisp, clean characteristics of the origin, allowing the specific terroir of the farm to remain at the forefront of the cup. This lot serves as a refined example of how careful cultivation and precise processing can elevate a traditional varietal into a complex, competition-ready experience.
