Context
This natural-process Ethiopian from Gatta Farm in Sidama showcases the fruit-forward character typical of naturally-processed coffees, where the bean ferments within its dried fruit. Natural processing tends to emphasize winey, fruited notes and heavier body—a signature that appears here alongside the bright, aromatic profile Dear Green Coffee has identified. The combination of tropical fruit with florals like jasmine reflects how naturally-processed Ethiopians often reveal floral complexity alongside their fruit-driven sweetness. This lot balances honeyed sweetness with bright acidity, offering both depth and clarity in the cup.
