From the roaster

Summer Solstice returns from Brazil's renowned Daterra farm, delivering a vibrant and fruit-forward cup with notes of cacao, pomegranate and tropical fruits. Crafted from Paraiso, Yellow Catuai and Arara varieties, this tree-dried natural coffee combines juicy fruit character with a rounded body and lingering sweetness.

Produced in the Cerrado region, the cherries are left to dry naturally on the tree, a unique processing method that develops exceptional sweetness, complexity and depth of flavour.

Daterra is the world's first B Corp-certified and carbon-negative coffee farm, with sustainability and innovation at the heart of everything they do. The result is a standout Brazilian specialty coffee that showcases both exceptional flavour and responsible production.

Context

Produced by Daterra in the Cerrado region, this Brazil Summer Solstice lot showcases the distinct profile of a tree-dried natural process. While natural-processed coffees are often celebrated for their heavy body and intense sweetness, this specific method allows the cherry to dehydrate while still attached to the branch, concentrating sugars before harvest. Roasted by Dear Green Coffee, the cup presents a complex interplay of cacao, pomegranate, and tropical fruits.

When evaluating such profiles, it is helpful to reference the flavor wheel to identify the nuances between the deep, earthy base notes of cacao and the bright, acidic top notes of pomegranate. This selection highlights the innovative agricultural practices currently defining the Brazilian specialty landscape, offering a sophisticated take on the traditional regional character. By allowing the fruit to dry on the tree, Daterra achieves a unique balance that distinguishes this lot from standard washed or mechanically dried counterparts.
