TASTE: Hibiscus, Guava, Watermelon

ROAST: Light

Jhoan Vergara’s naturally processed Sidra is a unique and vibrant example of meticulous processing from his farm, Finca Las Flores. Likely the result of crossbreeding Typica and Bourbon varietals (though some recent testing has linked it genetically to Ethiopian Landraces), this relatively new varietal offers a highly complex flavor profile—and this release from Jhoan is no exception. Once harvested, the cherries undergo a 12-hour oxidation period before a submerged fermentation in a controlled environment for 48 hours. Following this, the coffee is subjected to a thermal shock process with water heated to 50 degrees Celsius to stabilize and fix the aromatic compounds. Finally, it undergoes a 24-hour drying process in a mechanical dehumidifier. The care and skill invested in this coffee are evident in its vibrant and structured cup profile. This year’s lot offers bright hibiscus florals with notes of guava and watermelon.

Context

Produced by Jhoan Vergara at Finca Las Flores in Acevedo, Huila, this Colombia Las Flores Sidra represents a meticulous approach to specialty coffee. The Sidra varietal is increasingly recognized for its complex profile, often bridging the gap between the intensity of heirloom varieties and the structured clarity of modern hybrids. Grown at 1750 masl in the renowned Colombia · Acevedo, Huila region, this lot undergoes a washed process, a method typically employed to highlight the inherent acidity and clean finish of the bean.

Sourced by Ozo Coffee, this selection showcases vibrant notes of hibiscus, guava, and watermelon. While washed coffees are generally celebrated for their crisp, tea-like elegance, the specific characteristics of the Sidra plant often introduce a unique depth that challenges the traditional flavor wheel. This offering provides a compelling look at how high-altitude cultivation and precise processing can elevate a single varietal to its full potential.
