2026 - Same as below. :)

2023 note: I get a bit more of a Guava added to the Bananananana cream thing. Think of this as Training Wheels Anerobic for those whose don't like them but want to check them out.

2022: Another Anaerobic from Colombia. It smells sweet and funky from the get. In the cup the funk doesn't entirely show up. I get more of a Banana and creamy thing going on. It could be together. The fruit wasn't as present in the sample but when you get coffees that mess up their water chemistry it's not a total given it will be a fruit bomb. Most cases it is but sometimes you get that fruity stewy thing or depending on if you maybe get a few extra light beans in the roast as the beans roasted funky - this occurs a great deal in robics you might run into some of that darker stuff. In general though I obviously take this coffee exceptionally light and if you want a real nice intro to Anaerobic styles - this one is more approachable to the masses.

Context

Produced by El Vergel in Colombia, this offering from Royal Mile Coffee showcases the distinct profile resulting from an anaerobic fermentation process. While traditional washed coffees often highlight the inherent acidity of the bean, anaerobic processing involves fermenting the cherries in an oxygen-free environment, a technique that frequently pushes the cup toward more intense, syrupy, and exotic fruit characteristics.

In this specific lot, the producer’s careful management of these conditions yields vibrant notes of guava and banana cream. To better understand how these unique fermentation techniques influence the final cup, you can explore our guide on processing methods. As you experience the complex sweetness of this coffee, you may find it helpful to reference the flavor wheel to identify the nuanced layers that define this particular anaerobic profile.
