2026 review. Another year, and keeping the coffee going. I still think this applies below.

2025 review.

I ran out of space on the bags to go deep with the farms so know it's more than just the popayan. This is important to only me.

I found myself liking this coffee because it didn't do the thing I expected it to. It's rather tea like reminding me more of an ethiopian (washed) coffee than anything else. It highlights some fruit with peach team and a heavy lime top note. That said it's not a washed ethiopia. It's very solidly a colombian coffee that was honey processes but a very good one.

Enjoy while it's here. Not a ton but fun.

Context

The Colombia Popayan Honey Process, offered by Royal Mile Coffee, highlights the distinct character of beans sourced from the Popayan region. By utilizing the honey process—a method where some or all of the fruit mucilage remains on the bean during drying—producers can influence the final cup profile, often bridging the gap between the clarity of washed coffees and the intensity of naturals.

When evaluating this specific lot, tasters may identify notes of peach tea and lime. To better understand how these descriptors fit into a broader sensory vocabulary, consult the flavor wheel. While honey-processed coffees are frequently noted for their balanced sweetness and syrupy body, the specific expression of these traits depends heavily on the local climate and the precision of the drying stage. This selection serves as an excellent example of how regional processing techniques continue to evolve within the Colombian coffee landscape.
