From the roaster

This is an anaerobic natural coffee with an added fruit fermentation step. You kind of have to want the (dried) strawberry thing in your coffee which isn’t a bad thing. I get a delicate strawberry and vanilla ice cream vibe without the funk from the just being an anaerobic natural side. Is this the worlds most funky coffee? No is this a pretty fun and different coffee from a producer testing the edges of what we can do with a coffee that is inherent to the natural/dry process taste profile and I dig it.

Context

The Colombia Strawberry Fruit Fermentation, offered by Royal Mile Coffee, represents a modern approach to post-harvest processing. Sourced from Colombia, this lot utilizes an anaerobic natural method, a technique that involves fermenting coffee cherries in an oxygen-free environment to influence the final cup profile. While traditional processing methods often focus on clarity, anaerobic techniques are frequently employed to push the boundaries of flavor intensity. To better understand how these specific environmental controls impact the bean, you can explore our guide on processing methods.

The roaster identifies distinct notes of strawberry and vanilla ice cream in this selection. When evaluating such specific profiles, it is helpful to reference the flavor wheel to categorize these sensory experiences. While anaerobic natural coffees often exhibit heightened sweetness and unconventional fruit characteristics, each lot remains a unique expression of its specific origin and the precise fermentation parameters applied during production.
