From the roaster

A rare process for Ethiopia that is sort of the feature here more so than the wildness of cup. There's that general honey'd/caramel/toasted thing that the process imparts which lends itself to ramping up those specific notes on their coffee. I've written that so many times i'm going to sleep as I write that. I did find there to be a really nice red fruit and candy like vibe to it. I'd give this a whirl as espresso.

Context

The Ethiopia Buncho Honey Process, offered by Royal Mile Coffee, represents a distinct approach to the traditional profiles found in Ethiopia. By utilizing the honey process, producers leave a portion of the coffee cherry's mucilage on the bean during drying, which often bridges the gap between the clarity of washed coffees and the intensity of naturals. You can learn more about how these processing methods influence the final cup profile in our technical guide.

In the cup, this selection highlights a balance of sweetness and depth, featuring notes of honey, caramel, and toasted sugars alongside bright red fruit and candy-like qualities. When evaluating these specific characteristics, it can be helpful to reference the flavor wheel to better identify the nuances of these sugar-browning and fruit-forward descriptors. This lot serves as an excellent example of how careful post-harvest handling can accentuate the inherent sweetness of Ethiopian heirloom varieties.
