From the roaster

Kedida Gubata is a new high-elevation separation from our export partners at SNAP. Now in our second year working with them on this lot, we decided to try it as a white honey process. In the cup we find honeydew, peach, and coffee blossom.

Context

The 2026 Kedida Gubata, sourced from Ethiopia by the producer SNAP, represents a distinct offering from Sey Coffee. This lot is processed using the white honey method, a technique that sits between washed and natural styles by leaving a thin layer of mucilage on the bean during drying. As detailed in our guide to processing methods, this approach often balances the clean acidity of washed coffees with the increased sweetness and body typically associated with honey-processed beans.

When evaluating the profile of this coffee—which features notes of honeydew, peach, and coffee blossom—it can be helpful to reference the flavor wheel to better identify these delicate fruit and floral characteristics. By carefully managing the drying process, the producers have highlighted a nuanced sweetness that distinguishes this specific harvest, offering a refined expression of the region's unique terroir.
