Banko Gotiti — Ethiopia

Washed · Ethiopian Heirloom

We've got another lot from the Banko Gotiti washing station, this time a washed local heirloom. Banko Gotiti is a village in the Gedeb district of Ethiopia's Gedeo Zone, with the co-op being founded in 2012. Banko Gotiti has about 300 members, who grow a mix of heirloom Ethiopian varietals, not traceable to a single variety of coffee.

Yirgacheffe is a densely vegated region, a product of the warm tropical climate with moderate wet and dry seasons. Most coffee is shade-grown by small producers using organic practices. The region contains a multitude of micro-regions, creating complex profiles depending on the washing station a particular coffee is from.

The process of producing Washed coffees in Ethiopia varies slightly from washing station to station. Generally the coffee is picked ripe and de-pulped the same day. fermented for a period of 8–12 hours in open-air tanks, then washed in water channels to remove the mucilage. Then, coffee is spread on raised beds to dry for 5–15 days, depending on the weather of course.
