From the roaster
A very very very very rare divisive coffee internally. I did not like this coffee but I am releasing it. For that reason alone you might want to try this as I wont buy it again. It's a bit too one note for me as it just does passion fruit and in my opinion a not good version. That said you might really like passion fruit and are jonesing for more Anaerobic process coffee and this maybe will be your most favorite coffee. There are folks who do like how this turned out for that reason, I'm releasing it. I'm totally ok not having a coffee i'm 100% on board with. I'm warning you. There are no "refunds" on this coffee.

Context
The Colombia Anaerobic Passion Fruit Co Ferment, offered by Royal Mile Coffee, represents a modern approach to post-harvest processing. Sourced from Colombia, this lot utilizes an anaerobic fermentation technique, a method where cherries are fermented in an oxygen-deprived environment to influence the final cup profile. While traditional washed coffees often highlight the inherent characteristics of the bean, anaerobic processing can significantly alter the sensory experience, frequently resulting in intensified fruit-forward notes like the passion fruit identified by the roaster.
To better understand how these specific techniques impact the final cup, readers can explore our guide on processing methods. Because anaerobic fermentation can produce complex, unconventional profiles, it is often helpful to reference the flavor wheel when identifying the nuanced acidity and sweetness present in such unique lots. This coffee serves as a compelling example of how producers are experimenting with controlled environments to push the boundaries of traditional flavor expectations.
