From the roaster

I don't have a ton to say here other than it does the Chiroso thing I love which is that sort of overpowered daily drinker with citric and fruit tones alongside caramel and "coffee" tastes. I will say this being a natural really makes this one sing and adds a nice grape taste.

This is a very good coffee.

Context

The Colombia Chiroso Natural, sourced by Royal Mile Coffee, offers a compelling look at the unique potential of the Chiroso varietal. Grown in the diverse landscapes of Colombia, this lot undergoes a natural processing method, a technique where the coffee cherry remains intact while drying. Generally, natural-processed coffees are known for their heavier body and pronounced fruit-forward characteristics, often resulting in a more complex cup profile.

When evaluating this specific coffee, drinkers may notice a distinct interplay between bright citric acidity and deep, sweet caramel undertones. The presence of grape notes further highlights the fruit-forward nature typical of this processing style. To better understand how these specific descriptors align with broader industry standards, enthusiasts can consult the flavor wheel. This selection serves as an excellent example of how regional terroir and careful post-harvest handling can elevate the inherent qualities of a rare varietal like Chiroso.
