From the roaster

This is a dry process coffee that tastes not too dissimilar to a washed but obviously is not one. There's a mixed berries/mishmash of berries in the cup. I found it to be a bit more tea like and floral which lends to the washed vibes, but there's certainly a fruity tone.

Context

The Ethiopia Guji Doggo Sudu, roasted by Royal Mile Coffee, offers a compelling look at the distinct profile of the Guji region. As a dry-processed coffee, this lot undergoes a traditional method where the cherry remains intact during drying, a technique often associated with a heavier body and pronounced sweetness. While processing methods significantly influence the final cup, natural-processed coffees from this area frequently exhibit vibrant, fruit-forward characteristics.

In this specific offering, the roaster highlights notes of mixed berries and floral aromatics. These descriptors align with the complex, tea-like, and fruit-driven profiles that have made Ethiopian coffees a cornerstone of specialty coffee. To better understand how these specific sensory attributes fit into the broader spectrum of coffee quality and character, enthusiasts can consult the flavor wheel to identify the nuances present in this unique Guji selection.
