From the roaster

I don't go hard on non Guji zone coffees so take this as one of those rarer type offerings from us. Here you'll get a less fruit/acidity overload coffee and I'll present that not every coffee needs to be that way. Even if it is better - i'm joking. You can expect that fruit laden cup just not a blueberry bomb. I picked up strawberries alongside lemon and lime with a honey sweetness to it. Certainly tea like and straddling the washed into dry process zone that shows off origin tastes rather than process driven.

Context

Sourced from the Jimma region of Ethiopia, the Ethiopia Jimma Birbirssa Dry Process represents a classic expression of its origin’s unique terroir. This lot is prepared using the dry process, a traditional method where the coffee cherry is dried intact, often resulting in a more pronounced sweetness and complex body compared to washed counterparts. Roasted by Royal Mile Coffee, this selection highlights a vibrant profile characterized by notes of strawberries, lemon, lime, and honey.

When evaluating such coffees, enthusiasts often reference the flavor wheel to better identify the nuanced interplay between bright citrus acidity and the deeper, fruit-forward sweetness typical of naturally processed Ethiopian beans. By focusing on the specific characteristics of the Jimma region, this coffee offers a distinct look at how traditional drying techniques can influence the final cup, providing a balanced experience that bridges delicate floral undertones with bold, fruit-driven intensity.
