Context

Produced by Elias and Shady Bayter in the Tolima region of Colombia · Tolima, this El Vergel lot showcases the classic profile of the Caturra varietal. Grown at 1450 masl, the coffee is prepared using the washed process, a method typically employed to highlight the inherent clarity and acidity of the bean by removing the fruit pulp before drying.

Sourced by The Barn, this selection reflects the meticulous cultivation standards maintained at the farm. While washed coffees are often celebrated for their clean, vibrant profiles, the specific nuances of any cup can be better understood by referencing the flavor wheel to identify individual aromatic compounds. By focusing on traditional processing and established varietals, this offering provides a clear window into the terroir of Tolima, emphasizing the balance and consistency that define high-quality Colombian production.
